Thai green curry

Chicken, aubergines and green beans cooked with Thai green curry paste and coconut milk and served with fragrant coriander.

What you need

6 tsp oil
1 onion, peeled and sliced
2 cloves garlic, peeled and crushed
700 g skinless, boneless chicken breasts, cut into large pieces
6 tsp-90 ml thai green curry paste
150 ml good chicken stock
75 g creamed coconut, crumbled
1 small aubergine, trimmed and chopped
1 small red chilli, de-seeded and sliced
175 g green beans, trimmed and halves
3-6 tsp chopped fresh coriander

Method

  1. Heat oil in a large frying pan. Fry the onion and garlic for 1-2 min until softened. Add the chicken and brown all over.

  2. Reduce heat. Stir in the curry paste, stock and creamed coconut. Bring to the boil, stirring all the time. Cover and cook for 30 min, stirring occasionally to prevent sticking.

  3. Add the aubergines, beans and chilli. Cook for 30 min.

  4. Stir in the chopped coriander before serving.
