Potato salad - microwave

This is a wonderful and quick salad flavoured with a touch of garlic. Serve warm for maximum flavour.

What you need

450 g peeled potatoes
3-4 drops lemon juice
freshly ground black pepper
seasoning
1 small onion, peeled and finely chopped
1 clove garlic, peeled and crushed
3 tsp vegetable oil
45 ml mayonnaise
6 tsp soured cream
6 tsp snipped fresh chives

Method

  1. Cut the peeled potatoes into 5mm dice. Rinse well in cold water. Place in an 18 cm round dish or a boiling bag. Sprinkle with a few drops of lemon juice and very little salt.

  2. Cover and cook on 100% FULL power for 8-10 min, shaking or tossing twice throughout. Leave to stand for a few min while preparing the dressing.

  3. Place the onion, garlic and oil into a bowl. Cover and cook on 100% FULL power for 3 min. Stir into the potatoes and leave to cool slightly.

  4. Add the mayonnaise, soured cream and half the chives. Adjust seasoning Serve warm or cold sprinkled with the remaining chives.
