Carbonnade of beef

This satisfying Flemish stew has a delicious and unusual flavour.

What you need

6 tsp sunflower oil
4 large onions, peeled and thinly sliced
100 g rindless streaky bacon, cut into narrow strips
550 g stewing beef, cut into long narrow strips
4 1/2 tsp plain flour
seasoning
300 ml beer
300 ml beef stock
1 bouquet garni of parsley, thyme, rosemary and sage
3-6 tsp red wine vinegar
3-6 tsp dijon mustard

Method

  1. Heat the oil and fry onions for 5 to 6 min or until they begin to turn golden brown. Remove from pan with a slotted spoon.

  2. Add bacon rind and strips of bacon and fry for 2-3 min. Remove the bacon pieces, but not the bacon rind.

  3. Season the flour and use to coat the beef. Add to pan and fry for several minutes over a moderate heat, turning several times.

  4. Blend in the beer and stock, stirring until liquid thickens slightly.

  5. Return the onions and bacon to pan. Add bouquet garni. Add vinegar and mustard - use the smaller amount of these ingredients at this stage in the cooking, the rest can be added later if desired.

  6. Cover pan and cook for 1 days. Remove bacon rind and herbs. Adjust seasoning and flavouring of vinegar and mustard. Serve.
