Bakewell tart

A light pudding that is full of flavour made from strawberry jam and flavoured with a hint of almonds

What you need

225 g shortcrust pastry
3 medium eggs, beaten
3 medium egg yolks
175 g butter, melted
175 g caster sugar
75 g ground almonds
180 ml strawberry jam
To glaze
45 ml icing sugar, sifted
1 tsp hot water

Method

  1. Preheat oven to 200°C.

  2. Roll out the pastry on a lightly floured surface and use it to line a 20 cm/ 8in deep, round, fluted flan tin. Place on a baking tray, top with greaseproof paper and fill with baking beans.

  3. Bake for 15 min.

  4. Remove greaseproof paper and baking beans. Return to the oven and cook for 5 min.

  5. Meanwhile, beat together the eggs, egg yolks, butter, sugar and almonds in a bowl, until well mixed.

  6. Remove the flan case from the oven, spread over the jam and pour in the egg mixture.

  7. Return to the oven and cook for 30 min, or until golden brown and the filling is firm to the touch.

  8. Mix the icing sugar and water together and spoon over the tart to glaze. Serve hot or cold in wedges.
