Classic tomato soup

Additive-free home-made tomato soup. Lovely!

What you need

6 tsp olive oil
1 kg tomato, halved
2 cloves garlic, peeled
1 small potato, peeled and sliced
300 ml water
1 tsp sugar
To garnish
4 tsp single cream

Method

  1. Preheat oven to 190°C.

  2. Lightly oil a roasting tin. Arrange tomatoes, cut side up, in roasting tin. Add garlic cloves. Season and drizzle over the remaining oil. Roast for 30 min.

  3. Meanwhile, boil the potato in the water until tender. Reserve the potato water.

  4. Skin the tomatoes and garlic. Put the tomato pulp and garlic into a blender or food processor with the cooked potato and potato water. Blend until smooth.

  5. Transfer to a pan. Add a little extra stock or water if the soup is too thick. Stir in sugar. Garnish with a little cream.
