Caerphilly cheese and apple salad
The slight saltiness of the cheese marries well with the apple and grapes. Serve well chilled.
What you need
- 1 red-skinned apple, cored and chopped
- juice of 1/2 lemon
- 6 sticks celery, sliced evenly
- 75 g chopped walnuts
- 100 g seedless black grapes
- 175 g caerphilly cheese
- 45 ml mayonnaise
- 45 ml natural yogurt
- To serve
- 75 g curly endive
Method
Toss the apple in lemon juice to prevent discoloration.
Mix the apple, celery, walnuts and grapes together.
Cut the cheese into 1 cm cubes and mix into the salad.
Combine the mayonnaise and yogurt. Add to the salad.
Serve salad on a bed of curly endive. Chill before serving.
