Caerphilly cheese and apple salad

The slight saltiness of the cheese marries well with the apple and grapes. Serve well chilled.

What you need

1 red-skinned apple, cored and chopped
juice of 1/2 lemon
6 sticks celery, sliced evenly
75 g chopped walnuts
100 g seedless black grapes
175 g caerphilly cheese
45 ml mayonnaise
45 ml natural yogurt
To serve
75 g curly endive

Method

  1. Toss the apple in lemon juice to prevent discoloration.

  2. Mix the apple, celery, walnuts and grapes together.

  3. Cut the cheese into 1 cm cubes and mix into the salad.

  4. Combine the mayonnaise and yogurt. Add to the salad.

  5. Serve salad on a bed of curly endive. Chill before serving.
