Summer wine cup
This versatile drink is not only a perfect accompaniment to roast game, and the ideal glaze on many fruit flans, but it adds a subtle taste to savoury and sweet sauces.
What you need
- 2 l sparkling rose wine
- 200 g ripe redcurrants, trimmed
- 75 g ripe whitecurrants, trimmed
- 75 g ripe blackcurrants, trimmed
- 150 ml brandy
- 50 g caster sugar
- crushed ice
- To decorate
- 1/4 cucumber sliced
- 3 tsp fresh mint
Method
Chill the wine well. Do not open the bottles until just before serving the wine cup.
Put the prepared currants into a bowl. Pour the brandy over the fruit. Add the sugar. Stir gently and leave for several hours to dissolve.
Transfer into a punch bowl. Add a little crushed ice. Add the wine.
Top with cucumber and mint leaves. Serve in chilled glasses.
