Vanilla flavoured redcurrants
This is a favourite dessert in Norway. The secret of the delicious flavour is to prepare it some hours before serving and to chill it well.
What you need
- 450 g redcurrants, stalks removed
- 50-75 g vanilla sugar, or to taste
Method
Put currants into a large basin. Mix the sugar in with a fork, mashing the fruit lightly.
Chill well.
Serving suggestion
Single cream, creme fraiche or fromage frais.

Prepare ahead and allow the flavours to develop.
