Japanese pork Teriyaki with mushrooms

Tender strips of pork are stir-fried in an Oriental sauce.

What you need

45 ml teriyaki sauce
60 ml red wine
6 tsp stock
100 g enoki mushrooms
200 g horse mushrooms, wiped and sliced
250 g shiitake mushrooms
450 g pork fillets, cut into thin slices
1 bunch salad onions, trimmed and shredded finely
3 tsp sesame seeds, toasted

Method

  1. Mix Teriyaki sauce, red wine and stock together in a large bowl. Add mushrooms and pork to marinade and mix well. Cover and leave for 1 days, stirring occasionally.

  2. Transfer, with the juices, to a large frying pan or wok. Cover and cook over a high heat for about 5 min, stirring occasionally. Stir in salad onions and cook for 1 min.

  3. Lift out pork and vegetables and keep warm. Reduce liquor to about 6 tablespoons by rapid boiling.

  4. Meanwhile, cook noodles according to pack instructions. Put noodles in bowls, top with pork and mushrooms. Pour the liquor over and scatter on sesame seeds.
