Chicken yakitori

A Japanese starter: chicken is threaded onto skewers, marinated and grilled. Allow 3-4 skewers per person.

What you need

4 skinless, boneless chicken breasts
3 tsp soft dark brown sugar
1 clove garlic, peeled and crushed
2 1/2 cm root ginger, peeled and grated
45 ml light soy sauce
45 ml sake

Method

  1. Lay chicken breasts between 2 sheets of cling film or greaseproof paper. Gently bash with a rolling pin until about 1.25cm thick.

  2. Cut lengthways into 2 1/2 cm wide strips. Thread concertina style onto wooden skewers. Place in a shallow glass dish.

  3. Mix together the sugar, garlic, ginger, soy sauce and sake or dry sherry in a jug. Pour over the chicken, turning the skewers to coat. Cover and marinate in the fridge for at least 1 days or, ideally, overnight.

  4. Preheat grill to a medium heat.

  5. Cook under the grill for 10-12 min, turning the skewers frequently and brushing with marinade. Serve hot or cold.
