Marinade
A basic recipe. Use to flavour meats and poultry.
What you need
- 60 ml brandy (optional)
- 150 ml white wine
- 1 small onion, peeled and finely chopped
- 2 fresh bay leaves
- 1 sprig fresh thyme
- 1 clove garlic, peeled and crushed
- 10 black pepper corns, crushed
- 1 pinch salt, or to taste
Method
Combine all ingredients together in a screw-top jar. Shake well.
Put meat or poultry in bowl. Pour marinade over. Cover. Marinate in fridge for 1 days, turning occasionally.
Cook on barbecue, in oven or under grill, using remaining marinade to baste.
Serving suggestion
Marinate meats or poultry before cooking.
