Marinade

A basic recipe. Use to flavour meats and poultry.

What you need

60 ml brandy (optional)
150 ml white wine
1 small onion, peeled and finely chopped
2 fresh bay leaves
1 sprig fresh thyme
1 clove garlic, peeled and crushed
10 black pepper corns, crushed
1 pinch salt, or to taste

Method

  1. Combine all ingredients together in a screw-top jar. Shake well.

  2. Put meat or poultry in bowl. Pour marinade over. Cover. Marinate in fridge for 1 days, turning occasionally.

  3. Cook on barbecue, in oven or under grill, using remaining marinade to baste.
