Broccoli and Stilton flan

Broccoli and Stilton cheese make perfect partners in this easy recipe.

What you need

350 g shortcrust pastry
1 egg white, lightly beaten
175 g broccoli florets, trimmed and blanched
225 g stilton cheese, grated
300 ml single cream
4 eggs, beaten
seasoning
25 g natural dried breadcrumbs

Method

  1. Preheat oven to 200°C. Line a 23 cm / 9 in deep, fluted flan tin with greaseproof paper.

  2. Turn out the pastry onto a lightly floured surface. Knead lightly. Roll out to fit the flan tin. Brush the base of the flan with the egg white. Line the inside of the flan with greaseproof paper. Fill with baking beans. Bake blind for 10-15 min.

  3. Remove the greaseproof paper and beans. Cook for 5 min. Remove from oven. Leave to cool slightly.

  4. Reduce oven temperature to 180°C.

  5. Arrange the broccoli and cheese over the base of the flan.

  6. Beat together the cream, eggs and seasoning. Pour into the flan case. Sprinkle over the breadcrumbs.

  7. Place flan tin on a baking tray. Cook in the oven for 40-45 min until golden brown and just set.

  8. Serve hot or cold in slices.
