Raspberry vinegar

This tangy vinegar is extremely easy to make and is wonderful for salads.

What you need

450 g raspberries, hulled and rinsed (thawed if frozen)
500 ml white wine vinegar

Method

  1. Place raspberries and vinegar in a large bowl.

  2. Cover. Leave in a cool place for 3 days.

  3. Strain through a fine sieve.

  4. Pour the liquid into clean bottles. Seal and label.
