Raspberry vinegar
This tangy vinegar is extremely easy to make and is wonderful for salads.
What you need
- 450 g raspberries, hulled and rinsed (thawed if frozen)
- 500 ml white wine vinegar
Method
Place raspberries and vinegar in a large bowl.
Cover. Leave in a cool place for 3 days.
Strain through a fine sieve.
Pour the liquid into clean bottles. Seal and label.
Serving suggestion
Try making into a warm vinaigrette - it'll really bring out the raspberry flavour.
