Aubergine, pepper and goat's cheese salad

A simple salad using Mediterranean vegetables and creamy goat's cheese.

What you need

2 red peppers, roasted, skinned and de-seeded
2 yellow peppers, roasted, skinned and de-seeded
2 green peppers, roasted, skinned and de-seeded
2 orange peppers, roasted, skinned and de-seeded
2 aubergines, sliced
150 ml extra virgin olive oil
50 g goat's cheese round, sliced thinly
45 ml white wine vinegar
3 tsp fresh thyme
seasoning

Method

  1. Pour half the oil in a large frying pan. Fry the aubergine slices in 2-3 batches for 2 min each side or until tender and golden. Remove with a slotted spoon and drain on kitchen paper. ,

  2. Cut the peppers in quarters and arrange on individual serving plates with the fried aubergine slices and cheese.

  3. Place the remaining oil in a screw-top jar with the vinegar, thyme leaves and seasoning. Shake well until combined.

  4. Pour the dressing over the salads just before serving.
