Mayonnaise

A basic recipe. Add a little sugar with the beaten egg mixture, if wished.

What you need

1 egg yolk
1 tsp mustard
seasoning
200 ml oil
1 tsp vinegar or

Method

  1. Beat the egg yolk with the mustard and seasoning.

  2. Stir in the oil very gradually, drop by drop, stirring well all the time so that egg absorbs the oil. The oil can be added more quickly when the mixture starts look thick and shiny. The mustard helps to stop it curdling - but if it should curdle, break another egg yolk into a clean bowl and add the curdled mixture gradually into it, mixing well all the time.

  3. This, as required, with either a little vinegar, lemon juice or cold water.
