Barbecue sauce

Use to baste or accompany meats and poultry.

What you need

150 ml vegetable oil
1 clove garlic, peeled and chopped
1 small onion, peeled and finely chopped
175 g tomato puree
150 ml malt vinegar
150 ml clear honey
1 pinch dried thyme
1 pinch dry mustard
50 ml worcestershire sauce
250 ml good beef stock

Method

  1. Heat the oil in a frying pan. Saute the onions and garlic gently for 2-3 min until softened but not browned.

  2. Remove from the heat. Add the remaining ingredients.

  3. Return to the heat and simmer for 10-15 min to thicken.

  4. Use for basting or as a table sauce.
