Barbecue sauce
Use to baste or accompany meats and poultry.
What you need
- 150 ml vegetable oil
- 1 clove garlic, peeled and chopped
- 1 small onion, peeled and finely chopped
- 175 g tomato puree
- 150 ml malt vinegar
- 150 ml clear honey
- 1 pinch dried thyme
- 1 pinch dry mustard
- 50 ml worcestershire sauce
- 250 ml good beef stock
Method
Heat the oil in a frying pan. Saute the onions and garlic gently for 2-3 min until softened but not browned.
Remove from the heat. Add the remaining ingredients.
Return to the heat and simmer for 10-15 min to thicken.
Use for basting or as a table sauce.
Serving suggestion
Baste chicken pieces, pork chops or serve with sausages or burgers.
