Pistachio and peppermint brownies

What you need

100 g unsalted butter
175 g plain chocolate, chopped
225 g granulated sugar
2 eggs, beaten
2 tsp vanilla essence
75 g self-raising flour
1 pinch salt
75 g chopped pistachio nuts
for the icing
225 g curd cheese
25 g caster sugar
3-4 drops peppermint essence
3-4 drops green food colouring
to decorate
1 chocolate flake, crumbled
10 g chopped pistachio nuts

Method

  1. Preheat oven to 180°C. Grease and line an 18 cm/7in square cake tin.

  2. Place the butter and chocolate in a heavy-based pan. Heat gently for 3-4 min, stirring until melted and smooth. Remove from the heat. Allow to cool until lukewarm.

  3. Stir the sugar into the cooled chocolate mixture. . Then stir in the eggs and vanilla essence.

  4. Sift together the flour and salt. Fold into the mixture. Fold in the nuts.

  5. Spoon the mixture into the cake tin. Bake for 15 min.

  6. Reduce heat to 170°C. Bake for 10-15 min or until the centre is almost firm and a skewer inserted in the centre comes out clean.

  7. Place the tin on a wire rack. Leave to stand for 20 min. Then turn out onto a wire rack to cool completely.

  8. For the icing: Beat the cream cheese until smooth. Stir in the sugar, peppermint essence and food colouring, mixing until soft and creamy.

  9. Spread over the top of the cake, using a palette knife. Decorate with chopped pistachio nuts and flake. Cut into equal squares.
