Yahni - Cypriot lamb stew

This recipe is good for any cut of meat, as it can be cooked slowly for hours. A great recipe for entertaining - just serve with rice or bread.

What you need

6 medium potatoes, peeled and cubed
juice of 1 lemon
1 kg diced lamb
1 large onion, peeled and chopped
60-90 ml olive oil
500 ml passata
seasoning
1/2 tsp dried oregano
1 kg okra, washed then trimmed
6 tsp olive oil

Method

  1. Sprinkle the cut potato with lemon juice, to prevent discoloration.

  2. Heat the oil in a large pan. Fry the lamb and onion gently in the oil, until the onion is soft and meat is lightly sealed.

  3. Add the passata. If needed, add some water so the meat is covered. Add the seasoning and herbs.

  4. Cover and simmer on a gentle heat, until meat is almost tender. Test after 1 hour although tougher cuts may need up to 3 hrs.

  5. Meanwhile, heat the remaining oil. Fry the okra lightly to brown.

  6. Add to the stew with the potato. Cover and cook gently for another 45-60 min. If the sauce seems too watery, remove lid and raise heat to allow the sauce to thicken. Skim any surface fat from the stew before serving.
