Parsley honey

This fragrant honey gels by the next day. It tastes and looks like heather honey.

What you need

150 g fresh parsley, stalks roughly chopped
900 ml boiling water
450 g granulated sugar
1/2 tsp vinegar

Method

  1. Put parsley into the pan of boiling water. Boil until it reduces by a third and strain.

  2. Add sugar and boil until syrupy (like honey), for about 20 min. Add the vinegar.

  3. Pour into sterilised pots. Allow to cool. Cover.
