Parsley honey
This fragrant honey gels by the next day. It tastes and looks like heather honey.
What you need
- 150 g fresh parsley, stalks roughly chopped
- 900 ml boiling water
- 450 g granulated sugar
- 1/2 tsp vinegar
Method
Put parsley into the pan of boiling water. Boil until it reduces by a third and strain.
Add sugar and boil until syrupy (like honey), for about 20 min. Add the vinegar.
Pour into sterilised pots. Allow to cool. Cover.
