Souffle omelette

These sweet, light and fluffy omelettes are extremely versatile. They can be filled with whatever takes your fancy - or happen to have in the cupboard...

What you need

2 medium eggs, separated
2 tsp cold water
15 g caster sugar
15 g butter
1 tsp icing sugar, for dredging

Method

  1. Whisk the egg yolks, water and caster sugar together until pale and creamy. In a separate non-greasy bowl, whisk the egg whites until just stiff.

  2. Carefully fold the beaten egg white into the egg yolk mixture. Heat a 15 - 18 cm omelette pan over a very gentle heat.

  3. Spread the egg mixture into the pan. Cook gently, without moving, until the bottom is set and pale golden brown.

  4. Place the omelette under a preheated grill until pale golden brown.

  5. Add a filling of your choice and serve, dredged with icing sugar.

Serving suggestion

Spoon over 2-3 tablespoons of fruit puree or thick fruit-flavoured fromage frais.

Cook's tip

Add a few drops of vanilla essence when whisking the egg yolks; or 1/2 teaspoon finely grated lemon rind.
