Paella
A traditional paella using plump short grain rice, chicken and fish. A great meal for entertaining as it not only tastes delicious, it looks fantastic too.
What you need
- 45 ml olive oil
- 4 chicken drumsticks
- 1 onion, peeled and chopped
- 1 clove garlic, peeled and crushed
- 1 red pepper, cored, deseeded, quartered and sliced
- 75 g frozen petits pois
- 175 g tomatoes, skinned and chopped
- 1 tsp paprika
- 300 g short grain rice
- 600 ml ready made chicken stock
- 4 strands-6 saffron
- 300 g fresh mussels, scrubbed and beards removed
- 75 g cooked peeled prawns

- 1/2 lemon, sliced
- 4 whole prawns
- 3 tsp chopped fresh parsley
Method
Heat the oil in a large frying pan or paella pan. Add chicken drumsticks and fry for 15-20 min, turning occasionally to brown evenly. Remove from pan with a slotted spoon and keep warm.
Add onion and garlic to pan and fry for 3-5 min. Add tomatoes, peas, pepper and paprika and cook, stirring, for 5 min.
Return chicken to pan. Stir in rice, stock and saffron. Bring to the boil, stirring constantly. Reduce heat and simmer for 20-25 min or until stock has been absorbed and rice is tender.
Put the mussels in a saucepan containing 1 cm of boiling water, discarding any that are already open. Cover and cook for 5 min until the shells are open. Allow to cool slightly. Then drain, discarding any which are still closed.
Stir the prawns and mussels into the rice mixture. Reheat for 5 min. Season and serve, garnished with lemon slices, whole prawns and a sprinkling of fresh parsley.

Cook's tip
The secret to a good paella is having a wide, shallow pan to ensure the cooking stock evaporates - otherwise the rice will stew and become sticky and stodgy.
