Traditional pancakes

The classic way to enjoy pancakes.

What you need

100 g plain flour
seasoning
1 medium egg, beaten
1 egg yolk
300 ml milk
3 tsp melted butter
To serve
60 ml caster sugar
60 ml lemon juice

Method

  1. Sift the flour and salt into a bowl. Make a well in the centre and add the egg, egg yolk and half the milk.

  2. Using a wooden spoon, stir from the centre, gradually drawing in the flour from around the sides of the bowl. Beat well to form a smooth batter. Then add the remaining milk and melted butter or oil.

  3. Heat a 15 cm pancake pan and grease lightly using a piece of kitchen paper smeared in oil. Pour in enough batter to thinly cover the base of the pan, tilting the pan to give an even thickness.

  4. Cook for 1-2 min until golden. Then toss or turn the pancake over using a palette knife and cook the other side for 1-2 min until golden.

  5. Turn the pancake out of the pan onto kitchen paper. Continue layering the pancakes, interleaving with kitchen paper, oiling the pan after cooking each pancake. Continue until all the batter is used

  6. Serve immediately, sprinkled with caster sugar and lemon juice.
