Spanish paella

An all-in-one meal. Serve piping hot with crusty bread.

What you need

6 tsp olive oil
6 chicken thighs or drumsticks
100 g chorizo sausages, thickly sliced
1 onion, peeled and chopped
1 clove garlic, peeled and crushed
1 green pepper, halved, cored, de-seeded and sliced
1 red pepper, halved, cored, de-seeded and sliced
1 yellow pepper, halved, cored, de-seeded and sliced
100 g peas
1 tsp paprika
450 g long grain rice
3-4 strands saffron
900 ml chicken stock, warmed
100 g peeled prawns
100 g cod fillets, skinned and roughly chopped
50 g squid rings, cleaned

Method

  1. Heat the oil in a large frying pan. Add chicken pieces and fry for 10-15 min until well browned. Remove from pan and keep warm. Add sausage, onion and garlic to pan and fry for 3-5 min. Add peppers, peas and paprika and fry for 5 min.

  2. Return chicken to pan and stir in rice, saffron and stock. Bring to boil, stirring constantly. Reduce heat and simmer uncovered for 20 min or until most of the stock has been absorbed and rice is tender.

  3. Stir the prawns, cod and squid rings into the pan and heat through for 5 min or until cod and squid are cooked. Season to taste. Serve immediately.
