Beef chilli starter with corn chips

Make this in advance and just reheat to serve.

What you need

3 tsp vegetable oil
1 small onion, peeled and finely chopped
1 clove garlic, peeled and crushed
225 g lean diced beef
1 tsp ground cumin
1 tsp paprika
1 tsp chilli powder
1 tsp dried oregano
1 pinch ground nutmeg
1/2 red pepper, cored, de-seeded and diced
1/2 green pepper, cored, de-seeded and diced
1 chilli, chopped, optional
425 g canned chopped tomatoes, thoroughly drained
6 tsp beer
seasoning
100 g canned red kidney beans, drained
6 tsp tomato puree
To serve
200 g corn chips or tortilla chips

Method

  1. Heat the oil in a large pan. Add the onion and garlic and fry for 3 min or until softened. Add the beef and cook for a further 5 min or until well browned.

  2. Stir in the cumin, paprika, chilli powder, oregano and nutmeg. Fry for a further 1-2 min, stirring constantly.

  3. Add the peppers, chilli, tomatoes, beer and seasoning. Bring to the boil and simmer gently for 60 min. Stir frequently.

  4. Add the red kidney beans and tomato puree. Simmer for a further 30 min,. Stir frequently.

  5. Taste and adjust seasoning if necessary. Serve with corn or tortilla chips.
