Traditional soda bread
An Irish recipe.
What you need
- 450 g plain flour
- 1 tsp bicarbonate of soda
- 3 tsp salt
- 300 ml buttermilk
Method
Preheat oven to 220°C. Lightly grease a baking tray.
Sift the flour, bicarbonate of soda and salt into a large bowl. Make a well in the centre and add half the buttermilk, using a round bladed knife to mix into the flour.
Add enough remaining buttermilk to make a soft but not sticky dough. Turn out onto a lightly floured surface and knead lightly until smooth.
Shape the dough into a round and place on the baking tray. Using a sharp knife, cut a cross in the top of the dough.
Bake in the oven for 30-35 min or until lightly browned and well risen. Serve the same day.

Cook's tip
The easiest way to tell whether the soda bread is cooked is to gently tap its base and if it sounds hollow it is cooked.
