Anglesea seafood fritters
These make a delightful starter - or lunch when served with salad.
What you need
- 350 g ready-prepared seafood cocktail eg cockles, mussels, prawns and crab stick
- For the batter
- 150 ml milk
- 1 egg, beaten
- 1 pinch salt
- 1 pinch cayenne pepper
- 100 g self-raising flour
- 175 ml oil for frying
Method
Finely chop the seafood with a knife or coarsely blend in a food processor.
Place the milk and egg into a food processor and blend. Add the seasoning and spoon the flour onto the rotating blades through the funnel of a food processor. Blend until smooth.
In a mixing bowl, blend the batter and seafood together until evenly mixed.
Heat the oil in a heavy based frying pan. Fry spoonfuls of the batter mixture in the oil for 2-3 min or until golden brown and cooked through. Turn the fritters over once during cooking. Drain the fritters on crumpled up kitchen paper.
Serving suggestion
Garnish with snipped fresh chives, lemon slices and sprigs of fresh dill. Serve with seasonal salad.
