Perfect egg and sausage pasta

This makes a good weeday meal. Make more than you need and serve the rest cold as a salad for lunch the next day. The dressing can be omitted if preferred.

What you need

200 g dried farfalle pasta
4 medium eggs
6 tsp vegetable oil
1 small onion, peeled, halved and sliced
10 button mushrooms, wiped and halved
50 g fine green beans, trimmed and cut into 2 1/2 cm lengths
4 frankfurter sausages, drained and cut into 5mm diagonal slices
2 small tomatoes, wiped and quartered
For the dressing
45 ml sunflower oil
3 tsp white wine vinegar
1 tsp fresh lemon juice
2 tsp chopped fresh mixed herbs

Method

  1. Cook the pasta in a large pan of fast boiling water for 10-12 min until tender. Thoroughly drain.

  2. Meanwhile, place the eggs in a pan of boiling water and cook for 8-10 min or until hard-boiled. Then run cold water over the eggs for 30 sec.

  3. Heat the oil in a frying pan. Fry the onion, mushrooms and beans together for 3-4 min or until tender.

  4. Add the frankfurters and tomatoes to the pan and cook for 1 min.

  5. In a screw-top jar, combine all the dressing ingredients. Shake together until well mixed.

  6. Shell and quarter the hard-boiled eggs.

  7. In a large salad bowl, combine the frankfurter mixture with the eggs, pasta and dressing. Toss until well mixed. Serve immediately.

Cook's tip

For a spicier flavour try replacing the frankfurters with pepperoni or kabono sausage.
