Granny's soft fruit griddle cakes

You can use any soft fruits like strawberries, raspberries or blackberries for this recipe.

What you need

For the pastry
50 g block margarine, diced
100 g plain flour, sifted
6 tsp cold water
For the filling
225 g strawberries
25-50 g caster sugar, to taste
For dredging
1-2 tsp caster sugar

Method

  1. Rub the fat into the flour until the mixture resembles fine breadcrumbs. Add enough cold water to make a smooth, but not sticky dough.

  2. Roll out the dough on a very lightly floured surface. Cut out 8 x 13 cm rounds.

  3. In the centre of each round place about 25 g soft fruit and sprinkle with a little of the sugar. Brush the edges of the pastry with a little water. Seal edges well and crimp together.

  4. Grease a griddle or heavy based frying pan. Preheat for about 4 min. Cook the cakes for about 4 min each side until golden.

  5. When cooked, quickly dredge with a little of the remaining sugar and serve.
