Highland casserole

A traditional Scottish recipe.

What you need

60 ml vegetable oil
675 g lean stewing beef, diced
6 tsp seasoned flour
175 g button onions, peeled
175 g rashers rindless streaky bacon, cut into 2 1/2 cm piece
8 juniper berries
1 tsp ground allspice
2 fresh bay leaves
600 ml red wine
175 g cooked whole peeled chestnuts
100 g button mushrooms, wiped

Method

  1. Heat the oil in a large heavy-based pan. Toss the beef in the seasoned flour until lightly coated. Add to the pan. Fry for 5-8 min, stirring constantly, until well browned. Remove from pan with a slotted spoon and keep warm.

  2. Add onions and bacon to pan. Fry together for 4-5 min or until well browned. Then return meat to pan with juniper berries, allspice, bay leaves and wine. Bring to the boil then cover and simmer for 1 hour 30 min, stirring occasionally.

  3. Add chestnuts and mushrooms to pan and cook for 30 min or until meat is tender. Transfer to a warmed serving dish.
