A simple Scottish potato recipe but good for entertaining as you can just leave it to cook in the oven.

What you need

450 g old potatoes, peeled and thinly sliced
225 g onions, peeled and thinly sliced
seasoning
150 ml chicken stock
25 g lard
To garnish
2 tsp chopped fresh thyme

Method

  1. Preheat oven to 190°C.

  2. Layer the potatoes and onions in an ovenproof dish or metal skillet, seasoning as you go.

  3. Pour over the stock. Season well. Cover tightly with a lid or foil.

  4. Cook in the oven for 1 hr 30 min - 1 days, or until potatoes are tender and golden brown. Serve immediately garnished with thyme.
