A simple Scottish potato recipe but good for entertaining as you can just leave it to cook in the oven.
What you need
- 450 g old potatoes, peeled and thinly sliced
- 225 g onions, peeled and thinly sliced
- seasoning
- 150 ml chicken stock
- 25 g lard
- To garnish
- 2 tsp chopped fresh thyme
Method
Preheat oven to 190°C.
Layer the potatoes and onions in an ovenproof dish or metal skillet, seasoning as you go.
Pour over the stock. Season well. Cover tightly with a lid or foil.
Cook in the oven for 1 hr 30 min - 1 days, or until potatoes are tender and golden brown. Serve immediately garnished with thyme.
