Chicken salsa

This Mexican style dish really gives chicken a kick.

What you need

1 onion, peeled and finely chopped
1 green chilli, de-seeded and finely chopped
450 g ripe tomatoes, peeled and chopped
6 tsp chopped fresh coriander
seasoning
6 tsp olive oil
1 tsp ground coriander
1 tsp ground cumin
freshly squeezed juice of 1 lemon
4 skinless boneless chicken breasts
To garnish
freshly ground black pepper
2 tsp chopped fresh coriander

Method

  1. In a bowl, mix together the onion, chilli, tomatoes, chopped coriander and seasoning.

  2. Spoon half the mixture into a separate bowl. Stir in the oil, ground coriander, cumin and lemon juice.

  3. Place the chicken breast in a shallow dish. Pour over the oily, spicy mixture. Cover and chill for at least 1 hour.

  4. Preheat a moderate grill.

  5. Grill the chicken breasts for 15-20 min, until cooked through, turning frequently.

  6. Serve the grilled chicken accompanied with the remaining salsa. Sprinkle over black pepper and fresh coriander.
