Corned beef bubble and squeak

A tasty dish where you can use leftover boiled potatoes, carrots or cabbage.

What you need

450 g boiled potatoes, diced
225 g boiled carrots, diced
50 g butter
350 g canned corned beef, finely cubed
1/2 cabbage, cored and very finely shredded
1 red onion, peeled halved and finely sliced
6 tsp chopped fresh parsley
1 egg, beaten
seasoning

Method

  1. Put the potatoes and carrots into a large bowl. Mash together with the butter.

  2. Stir in the corned beef, cabbage, onion, parsley, egg and seasoning. Mix well.

  3. Press the mixture into a large non-stick frying pan, pressing down to compact.

  4. Cover and cook over a medium heat for 8-10 min or until the bottom is browned and crispy.

  5. Cut into wedges to serve.
