Chunky three fruit marmalade

This recipe uses orange, grapefruit and pomelo - which are the size of a large grapefruit but with a lime-green rind. The recipe makes 3.5kg.

What you need

3 large oranges, washed
2 pomelos, washed
2 grapefruit, washed
2 1/4 kg granulated sugar

Method

  1. Pare the rind from the fruit as thinly as possible, using a potato peeler. Then cut into very thin shreds.

  2. Squeeze the juice from the fruits straining and reserving the pips. Tie the remaining pith and pips in a small piece of muslin.

  3. Place the fruit rind, juice and muslin bag in a preserving pan with 3.5Itr of water. Bring to the boil and simmer for 90 min or until tender.

  4. Remove the muslin bag squeezing well to extract as much juice as possible.
