Gazpacho
Gazpacho is a famous chilled Spanish soup made from a mixture of pureed salad ingredients with garlic, oil, vinegar and topped with croutons.
What you need
- 6 tsp fresh white breadcrumbs
- 3 tsp olive oil
- 500 ml bottled water
- 6 tsp red wine vinegar
- 450 g ripe tomatoes, peeled, de-seeded and chopped
- 1 cucumber, skinned and finely chopped
- 1 green pepper, cored, de-seeded and chopped
- 1 medium onion, peeled and roughly chopped
- 6 tsp tomato puree
- 500 ml water

- For the croutons
- 2-3 slices fresh white bread, crusts removed
- 6 tsp vegetable oil, for frying
- 1 clove garlic, peeled and finely chopped
- To garnish
- 1 small red pepper, cored de-seeded and diced
- 1 small green pepper, cored de-seeded and diced
- 2 tomatoes, skinned, de-seeded and diced
- 1/4 cucumber, diced
Method
Place the breadcrumbs in a large mixing bowl. Pour over the oil and vinegar. Leave to soak for 15-20 min.
Place the prepared vegetables in a food processor or blender with the tomato puree and half the water. Puree until smooth. With the motor still running, gradually add the remaining water.
Slowly pour the pureed mixture into the bowl of soaked breadcrumbs, stirring to thoroughly combine. Season well. Cover and chill for at least 1 days.
For the croutons: Evenly dice the bread slices. Heat the oil in a frying pan with the garlic. Add the bread and fry until golden brown. Remove with a slotted spoon and drain thoroughly on kitchen paper.
Serve garnished with the garlic croutons and diced pepper, tomatoes and cucumber.
Serving suggestion
Place 1 or 2 ice cubes in each bowl of soup. Serve with crusty bread.
