Seafood paella
You have to stand over this recipe while it's cooking but as it's all-in-one you don't have to worry about cooking anything to go with it.
What you need
- 60 ml oil
- 350 g pork tenderloin, cut into even slices
- 1 small chorizo sausage
- 1 onion, peeled and sliced
- 1 red pepper, cored de-seeded and sliced
- 2 cloves garlic, peeled and crushed
- 275 g arborio rice
- 600 ml good chicken stock
- 75 g frozen peas
- 1 pinch ground turmeric

- 350 g fresh mussels in their shells, cleaned
- 100 g peeled prawns
- 50 g whole prawns
- 50 g cooked squid rings
- To garnish
- 3 tsp fresh parsley, finely chopped
Method
Heat the oil in a large frying pan, wok or paella pan. Gently fry the pork pieces and chorizo sausage for about 10 min or until golden brown on all sides. Remove from the pan and keep warm.
Add the onion and pepper to the frying pan, add the garlic and rice until coated with oil. Pour in about one third of stock. Add the peas, turmeric and seasoning. Add the chicken and bring to the boil stirring occasionally. Cover and cook for 5 min or until the liquid has just been absorbed. Then pour in another third, cook for another 5 min, stirring to prevent sticking.
Once the liquid has been absorbed stir in the remaining stock and cook carefully until the rice is dry and cooked through.
Once cooked, stir in the mussels, prawns and squid. Cover and cook for a further 5 min or until the mussels open, (remember to discard any that remain closed). Stir occasionally. Garnish with a sprinkling of parsley and serve immediately.
Serving suggestion
Cook's tip
Replace the ground turmeric with 1/2tsp powdered saffron if liked or a few drops of edible food colouring in the Paella.
