Chilli beef enchiladas

An excellent alternative to a traditional chilli.

What you need

3 tsp vegetable oil
1 onion, peeled and finely chopped
1 clove garlic, peeled and crushed
450 g lean minced beef
200 g canned red kidney beans, drained and rinsed
seasoning
1/4-1/2 tsp chilli powder or chilli seasoning
2 tsp plain flour
3 tsp tomato puree
400 g canned chopped tomatoes
4 flour tortillas
25 g butter or margarine, melted
To garnish
1 lime, cut into slices
4 sprigs fresh coriander

Method

  1. Preheat oven to 150°C.

  2. Heat the oil in a large saucepan. Add the onion and garlic and fry for 2-3 min or until just softened. Stir in the mince.

  3. Cook and stir for a further 5-8 min or until just browned. Stir in remaining ingredients.

  4. Bring to the boil then reduce heat and simmer for 25-30 min.

  5. Meanwhile, brush one side of each tortilla with a little of the melted butter or margarine and wrap in aluminium foil.

  6. Warm through in the oven for 15 min. Unwrap the tortillas. Fill with the mince mixture and re-roll. Return to the oven for a further 10 min.

  7. Serve garnished with lime slices and fresh coriander.
