Quick cherry freezer jam

What you need

450 g fresh ripe cherries, washed and stoned
450 g sugar with pectin
6 tsp lemon juice, to taste

Method

  1. Chop the cherries finely in a food processor. Transfer into a bowl with the sugar and lemon. Stir well and leave to stand at room temperature for several hours until the fruit has softened and the sugar has dissolved.

  2. Pour into a plastic container. Seal, label and freeze until firm. Use within 9 months. Store in the fridge for up to 3 weeks once opened.
