Mediterranean style pitta pockets

A delightful change from sandwiches for lunch!

What you need

2 pittas
50 g mixed lettuce
1/8 cucumber, sliced
6 tsp ready-made french dressing
4 rashers rindless bacon, cut in half and rolled up
4-8 cherry tomatoes
50 g feta cheese, diced

Method

  1. Preheat grill to medium.

  2. Carefully score the top edge of the pitta bread.

  3. Toss together the lettuce, cucumber and half the dressing. Fill each pitta pocket with the salad.

  4. Gently grill the bacon rolls for 5 min turning once or twice. Thread the tomatoes, bacon and cheese onto two skewers and grill for 1-2 min basting with the remaining dressing. Place the kebabs into the pitta pockets and serve immediately.
