Skewered mini koftas with coriander

These make a good starter or light meal served with rice and shredded lettuce.

What you need

3 tsp vegetable oil
1 small onion, peeled and finely chopped
1 clove garlic, peeled and crushed
1 red pepper, de-seeded and very finely chopped
1 tsp Korma curry powder
350 g lean minced beef
seasoning
3 tsp chopped fresh coriander

Method

  1. Heat the oil in a frying pan. Add the onion, garlic, pepper and curry powder. Fry together for 2 min or until softened. Remove from heat and transfer to a bowl.

  2. Stir in the minced beef, seasoning and coriander until well mixed. Divide mixture into 12 equal amounts.

  3. Preheat grill.

  4. Grill the mini koftas for 3-5 min or until cooked thoroughly.

Serving suggestion

Serve on a cocktail stick with a little salad and a yogurt and cucumber dip. Garnish with lime wedges.

Cook's tip

If preferred the Mini koftas can be fried for 3-5 min instead of being grilled.
