Skewered mini koftas with coriander
These make a good starter or light meal served with rice and shredded lettuce.
What you need
- 3 tsp vegetable oil
- 1 small onion, peeled and finely chopped
- 1 clove garlic, peeled and crushed
- 1 red pepper, de-seeded and very finely chopped
- 1 tsp Korma curry powder
- 350 g lean minced beef
- seasoning
- 3 tsp chopped fresh coriander
Method
Heat the oil in a frying pan. Add the onion, garlic, pepper and curry powder. Fry together for 2 min or until softened. Remove from heat and transfer to a bowl.
Stir in the minced beef, seasoning and coriander until well mixed. Divide mixture into 12 equal amounts.
Preheat grill.
Grill the mini koftas for 3-5 min or until cooked thoroughly.
Serving suggestion
Serve on a cocktail stick with a little salad and a yogurt and cucumber dip. Garnish with lime wedges.
Cook's tip
If preferred the Mini koftas can be fried for 3-5 min instead of being grilled.
