Date delight
These nutty sweets are good after-dinner treats and could make a nice gift at Christmas.
What you need
- 225 g fresh dates, stoned and chopped
- 50 g ghee
- 75 g ground almonds
- 75 g pistachio nuts, chopped
- 75 g cashew nuts, chopped
- 3 tsp desiccated coconut
Method
Melt the butter in a pan. Add the dates. Cook over a moderate heat for 15 min, stirring all the time.
Remove from heat and stir in the ground almonds. When thoroughly mixed, return to the heat and cook for 2-3 min until mixture is very stiff. Remove from heat.
Add the pistachio nuts and cashews. Mix well. Turn the mixture into a greased and lined 18 cm square tin. Smooth over the surface and sprinkle with coconut. Cut into triangles or diamonds to serve.
Serving suggestion
Decorate each piece with half a pistachio nut.
