Dairy scones

Treat yourself to an old fashioned cream tea: scones served with cream and jam.

What you need

450 g plain flour
1 tsp salt
6 tsp baking powder
50 g butter
2 medium eggs
150 ml fresh single cream
2-4 tsp milk to bind and brush
To serve
60 ml strawberry jam
300 ml double cream, lightly whipped

Method

  1. Preheat oven to 200°C.

  2. Sift flour, salt and baking powder together. Rub in the butter until mixture resembles coarse breadcrumbs. Beat eggs and single cream together. Make a well in the centre of the dry ingredients and pour in the cream mixture. Mix well and knead lightly to form a soft but not sticky dough. Add a little extra milk if necessary.

  3. Lightly knead the mixture on a very lightly floured surface. Roll out to 2 cm thick. Cut into 10 x 6cm rounds. Place onto a lightly floured baking tray. Brush with milk and bake in the oven for 15 min or until risen and golden brown.

  4. Leave to cool on a wire rack. To serve, cut the scones in half and spread with strawberry jam and lashings of cream.
