Carrots in herby mayonnaise

This is a nice vegetable to serve when entertaining - particularly with grilled salmon or chicken.

What you need

225 g carrots, peeled and sliced diagonally
1/2 tsp freshly squeezed lemon juice
3 tsp chopped fresh parsley
4 1/2 tsp mayonnaise
seasoning

Method

  1. Place the carrots in a pan. Add enough water to just cover. Cover with a tight fitting lid. Bring to the boil and simmer for 10-15 min, shaking the pan occasionally, until the carrots are tender, adding more water if necessary.

  2. Drain the carrots well. Mix the lemon juice and parsley into the mayonnaise. Stir into the carrots. Season well and serve in a warmed serving dish.
