Lemony vegetables

An easy way to cook a selection of colourful and tasty vegetables.

What you need

25 g butter
4 1/2 tsp freshly squeezed lemon juice
1 tsp lemon rind
seasoning
1 leek, trimmed, washed and sliced
50 g extra fine asparagus
100 g mange-tout, trimmed
3-4 courgettes, trimmed and sliced

Method

  1. Melt the butter in a large frying pan over a moderate heat. Add the lemon juice, rind and seasoning followed by the vegetables.

  2. Stir well to coat the vegetables. Cover the pan and cook for 5-7 min, shaking the pan occasionally, until the vegetables are tender.

  3. Serve immediately on a warmed serving dish.
