Heart-shaped meringues with red wine

This recipe is much easier if you use ready-made meringue nests!

What you need

100 g strawberries, hulled
50 g raspberries, thawed, if frozen
2-3 tsp caster sugar
60 ml red wine
2 medium egg whites
100 g caster sugar
1 tsp cornflour
3-4 drops vanilla essence
2 tsp brandy
150 ml creme fraiche
1 passion fruit
To decorate
2 sprigs fresh mint


  1. Place the strawberries and raspberries in a bowl with the sugar and wine. Mix gently. Leave to macerate for at least 1 days.

  2. Preheat oven to 150°C. Line a baking sheet with parchment paper.

  3. Whisk the egg whites until stiff. Gradually whisk in half the sugar, whisking well after each addition until thoroughly incorporated. Using a large metal spoon, fold in the remaining sugar followed by the cornflour, vinegar and vanilla essence.

  4. Spoon the meringue into a piping bag fitted with a star nozzle. Pipe 2 heart shapes, about 10 cm long, on the baking sheet. Then pipe another layer of meringue on top.

  5. Place in the oven for about 1 hour until crisp and dry.

  6. Transfer the cooked meringues to a wire rack to cool. When completely cold, peel off the non-stick paper.

  7. To serve, fold the brandy into the creme fraiche or cream and spoon onto the meringues. Arrange the fruit on top with a little of the juice.

  8. Slice the passion fruit in half and scoop out the seedy flesh and spoon over the fruits. Decorate with fresh mint sprigs and serve.

Cook's tip

If the meringues are cooking too quickly turn the oven down to minimum temperature and leave the oven door open a little. Remember to whisk the egg whites up in a grease free bowl. Or save time with ready-made meringue nests.
