Apple and almond bakewell tart
This variation on the traditional bakewell tart is complemented beautifully by lashings of hot custard.
What you need
- 175 g puff pastry, thawed if frozen
- 100 g caster sugar
- 50 g butter, softened
- 100 g ground almonds
- 3 tsp calvados brandy
- 3 eggs, beaten
- 3-5 drops almond essence
- 175 g cooking apples, peeled, cored and diced
- 60 ml raspberry jam
- 3 tsp flaked almonds
Method
Preheat oven to 200°C.
Roll out the pastry on a lightly floured surface. Use to line an 18 cm loose-bottomed, fluted flan tin.
Cream together the butter and sugar until pale. Beat into the mixture, the almonds, Calvados, eggs and almond essence. Fold in the prepared apples.
Spread the bottom of the pastry case with the jam and pour over the almond mixture.
Scatter over the flaked almonds and bake for 25-30 min, or until the filling is firm to touch.
Serve, hot or cold.
Serving suggestion
Decorate with a dredging of caster sugar.
