Apple and almond bakewell tart

This variation on the traditional bakewell tart is complemented beautifully by lashings of hot custard.

What you need

175 g puff pastry, thawed if frozen
100 g caster sugar
50 g butter, softened
100 g ground almonds
3 tsp calvados brandy
3 eggs, beaten
3-5 drops almond essence
175 g cooking apples, peeled, cored and diced
60 ml raspberry jam
3 tsp flaked almonds

Method

  1. Preheat oven to 200°C.

  2. Roll out the pastry on a lightly floured surface. Use to line an 18 cm loose-bottomed, fluted flan tin.

  3. Cream together the butter and sugar until pale. Beat into the mixture, the almonds, Calvados, eggs and almond essence. Fold in the prepared apples.

  4. Spread the bottom of the pastry case with the jam and pour over the almond mixture.

  5. Scatter over the flaked almonds and bake for 25-30 min, or until the filling is firm to touch.

  6. Serve, hot or cold.
