Flaming fruit kebabs

Exotic kebabs that can be grilled or cooked on the barbecue.

What you need

550 g lean lamb fillets, diced into 5 cm pieces
1 large courgette, trimmed and thickly sliced
1 firm ripe mango, peeled and cut into thick pieces
1 large orange, rind and pith removed
45-60 ml brandy
2 tsp paprika
For the marinade
60 ml orange juice
45 ml clear honey
2 cloves garlic, peeled and crushed
3 tsp tomato puree
6 tsp oil
seasoning

Method

  1. Preheat the grill to medium.

  2. Mix together thoroughly the marinade ingredients. Add the lamb.

  3. Thread the lamb, vegetables and fruit alternately onto skewers. Baste with the marinade.

  4. Grill the kebabs for 10-15 min, turning occasionally.

  5. Place kebabs onto a hot serving plate and pour over the brandy.

A nutty rice such as brown rice or a wild rice.

Cook's tip

You could flambe the kebabs after pouring over the brandy - but do be careful!
