Ham and leek gratin

A delicious combination or leeks, ham and cheese.

What you need

1 leek, trimmed and cleaned
15 g butter
15 g plain flour
150 ml milk
50 g red leicester cheese, grated
seasoning
2 slices ham
15 g breadcrumbs

Method

  1. Preheat oven to 200°C.

  2. Cut leek in half widthways to give 2 equal sized pieces. Cook in boiling water for about 7 min, until just tender. Drain well.

  3. Melt butter in pan. Add flour to make a roux. Cook for 1-2 min. Gradually blend in milk to make a smooth sauce. Bring to boil, stirring continuously. Cook for 2 min. Remove from heat and add half the cheese. Season.

  4. Wrap leek portions in the ham and place in a gratin dish. Pour over the cheese sauce. Mix remaining cheese with the breadcrumbs and sprinkle over the leeks.

  5. Bake for 15 min or until piping hot. If the top of the gratin is not brown enough it can be placed under a pre-heated grill until golden.
