Avocado and bacon salad

A quick, satisfying salad, perfect for a summer lunch.

What you need

200 g mixed lettuce leaves
1 firm ripe avocado, peeled and stoned
juice of 1 lemon
8 rashers rindless bacon, cut into even strips
175 g brie cheese
40 g ready-made croutons
For the dressing
50 ml sunflower oil
5 tsp olive oil
1/2 tsp ready-made mustard
1/4 tsp sugar
seasoning

Method

  1. Arrange the lettuce onto serving plates. Slice the avocado. Toss carefully into the lemon juice. Keep the lemon juice for later.

  2. Gently fry (or grill) the bacon until just crisp. Drain on kitchen paper. Dice the Brie into even sized pieces. Arrange with the croutons and bacon on the salad.

  3. Put the reserved lemon juice and dressing ingredients in a pan and warm gently. Season to taste. Pour the dressing over the salad and serve.
