Curried lamb parcels

These tasty pastry parcels are filled with curried minced lamb and vegetables. Great hot or cold.

What you need

For the filling
15 g butter
350 g lean cooked lamb, minced
1 onion, peeled and chopped
1 clove garlic, peeled and crushed
50 g button mushrooms, wiped and sliced
2-3 tsp ready-made medium curry paste
1/4 tsp ground cumin
50 g frozen peas
1 carrot, peeled and shredded
6 tsp lamb stock
For the pastry
450 g ready-made puff pastry
1 medium egg, beaten
To garnish
3 tsp cumin seeds

Method

  1. Preheat oven to 220°C.

  2. Melt the butter in a pan. Add the remaining filling ingredients. Stir together. Cook for 5 min, covered. Leave to stand.

  3. Roll out the pastry to make 4 rectangles, 13 x 15 cm. Brush the pastry with beaten egg. Divide the filling evenly between the four oblongs, leaving 2.5cm border around the edges of the pastry.

  4. Fold over the pastry, making parcels. Seal and flute edges of the parcels. Place on to a lightly greased baking tray. Make a hole in the centre of each parcel. Brush each with beaten egg. Sprinkle over the cumin seeds.

  5. Place in the oven for 8-10 min, until well risen and golden brown. Serve hot or cold.
