Fanned roast potatoes

A good accompaniment for roasted meats and poultry, these potatoes are ideal for entertaining.

What you need

1 1/2 kg potatoes, peeled
6 tsp vegetable oil for brushing
seasoning

Method

  1. Preheat oven to 220°C.

  2. Cut the potatoes across their width at 5mm intervals, three quarters of the way through.

  3. Place in an oiled baking tin. Brush with oil. Season to taste. Roast in the oven for 45-60 min. Serve immediately.
