Prune and nut teabread

A really wholesome treat!

What you need

225 g ready-to-eat prunes, pitted and finely chopped
60 ml boiling water
25 g butter
75 g wholemeal flour
1 1/2 tsp baking powder
75 g white self-raising flour
25 g soft brown sugar
100 g chopped walnuts
1 large egg
6 tsp milk
1 small orange, peeled and segmented

Method

  1. Preheat oven to 180°C.

  2. Sieve together the flours with the baking powder. Return bran in sieve to the flour.

  3. Grease and lightly flour or line a 675 g loaf tin.

  4. Put the prunes in a basin. Add the boiling water and butter or margarine. Stir well. Leave for 15 min.

  5. Blend in the rest of the ingredients and mix well. Spoon into the tin and arrange the orange segments on the top of the cake. Place in the oven for 40 min or until firm.

  6. Leave to cool for a few min in the tin. Turn out onto a wire cooling tray to cool completely.
