Spicy Eastern style squash

An all-in-one meal.

What you need

4 very small butternut squash, each approx. 450 g
3 tsp vegetable oil
3 tsp pine nuts
1 onion, peeled and chopped
1 clove garlic, peeled and crushed
1 tsp ground coriander
2 tsp ground cumin
350 g minced beef
400 g canned chopped tomatoes
6 tsp tomato puree
100 g raisins
seasoning
3 tsp chopped fresh coriander

Method

  1. Preheat oven to 180°C.

  2. Cut the tops from the squash. Carefully hollow out the centre leaving a 1 cm border around the edge.

  3. Discard the seeds. Roughly chop the flesh. Heat the oil in a pan. Add the pine nuts, onion and garlic and fry for 3 min.

  4. Add the spices to the pan with the mince. Fry for 5 min or until well browned.

  5. Add the tomatoes, tomato puree, raisins, seasoning and chopped squash to the pan. Bring to the boil and simmer for 15 min.

  6. Stir the coriander into the pan. Divide the mixture between the squash shells.

  7. Place on a baking tray and cook in the oven for 25 min.
