Spaghetti carbonara

A classic Italian dish.

What you need

45 ml extra virgin olive oil
50 g onions, peeled and finely chopped
3 cloves garlic, peeled and crushed
225 g rindless back bacon, diced
60 ml dry white wine
450 g spaghetti
300 ml double cream
2 medium egg yolks
6 tsp fresh parsley,chopped
freshly ground black pepper
50 g parmesan cheese, grated

Method

  1. Cook the spaghetti according to pack instructions. Drain thoroughly.

  2. Heat the olive oil in a frying pan. Fry the onions, garlic and bacon for 3-5 min until golden brown.

  3. Add the white wine and reduce by half. Add the spaghetti and allow to simmer in the cooking mix for 1-2 min.

  4. Add the double cream and simmer for 1-2 min. Remove from the heat completely. Add the egg yolks.

  5. Stir in the parsley. Season to taste. Finish the dish with the grated cheese.

Cook's tip

Add a tablespoon of the oil when cooking the spaghetti to prevent sticking.

An easy recipe using mostly store cupboard ingredients. I only had single cream but tasted lovely.
