Spaghetti carbonara
A classic Italian dish.
What you need
- 45 ml extra virgin olive oil
- 50 g onions, peeled and finely chopped
- 3 cloves garlic, peeled and crushed
- 225 g rindless back bacon, diced
- 60 ml dry white wine
- 450 g spaghetti
- 300 ml double cream
- 2 medium egg yolks
- 6 tsp fresh parsley,chopped
- freshly ground black pepper
- 50 g parmesan cheese, grated
Method
Cook the spaghetti according to pack instructions. Drain thoroughly.
Heat the olive oil in a frying pan. Fry the onions, garlic and bacon for 3-5 min until golden brown.
Add the white wine and reduce by half. Add the spaghetti and allow to simmer in the cooking mix for 1-2 min.
Add the double cream and simmer for 1-2 min. Remove from the heat completely. Add the egg yolks.
Stir in the parsley. Season to taste. Finish the dish with the grated cheese.
Serving suggestion
Garlic bread and a green salad.
Cook's tip
Add a tablespoon of the oil when cooking the spaghetti to prevent sticking.
